Russets, also named Idaho potatoes, are large and oblong. They have a mealy flesh and a rough brown skin. They are the best for baking and frying.

Red potatoes can come in the Norland, Red Bliss and Red Pontiac variety. These spuds are small, round and have a thin skin. They work well when boiled, steamed or simmered for soups.

The Bintje spud comes from Netherlands, where it is appreciated for making French fries. It crashes easily, so it is well adapted to do mash potatoes. Its flesh is floury. It is the potato used for the famous Belgian fries.

The Nicola potato is from Germany, but is also cultivated in Austria, Spain, France and Luxembourg. It has been created only in 1973 by a German breeder.
